The estate is located in the triangle Nîmes / Uzès / Alès, a small village called Saint Césaire de Gauzignan, nestled in the middle of the vineyards, it is here that our first bottles were born.
With the help of geological maps, we have rigorously selected the plots, in order to bring out the best terroirs for fine and balanced whites, and reds combining power and delicacy.
Different techniques are used to best respect the ground.
By opting for plant cover, I am betting on a virtuous circle.
By planting legumes, cereals and crucifers in the fall, these plants grow all winter, the roots loosening the soil, absorbing carbon.
In the spring, the plants are rolled, distributing the stored nitrogen to the vines, the resulting mulch maintains the humidity in the summer and creates a living soil where biodiversity is preserved.
I combine these environmentally friendly methods with a constant search for quality throughout the vinification, waiting for optimal maturity at harvest and the necessary maceration time.
