Description
Winemaking : Harvested manually at optimal maturity, vinified in barrels, the extraction is obtained by manual punching down, followed by a long maceration of 12 weeks, and aging for 14 months in French oak barrels. Several subdrafts are carried out to avoid severe filtration.
Tasting : Intense red limpid robe. Nose of red fruit, blackberry, cherry with hints of liquorice. Ample wine on the palate with spicy aromas, prunes, almonds and garrigue.
Pairings: Perfect marriage with a rib of beef, a leg of wild boar, mature cheeses. Serve at 14°.
